The kitchen range hood system consists of several key components to ensure that the proper airflow is circulated through the kitchen to capture smoke, steam, heat, grease and other food-related vapors into the system. The purpose of any restaurant kitchen ventilation system is to remove the heat, grease and other vapors generated in the kitchen to keep the kitchen running safely and efficiently.
1. Exhaust fan; The heart of the restaurant kitchen ventilation system is the exhaust fan or ventilator, a variety of up-drum exhaust fans are available, designed to draw all the heat, grease and other kitchen-related steam into the ductwork system and vertically away from the building.

2.Ventilation hood; The kitchen ventilation hood is placed above the heating element in the dining room to immediately collect all heat and grease from the source. The baffle filter is placed inside the dining room ventilation hood to filter as much grease as possible to prevent it from entering the ductwork of the ventilation system. The type of stove, oven or grill you use in your kitchen will determine which type of baffle filter is needed to ensure the safe and efficient operation of the restaurant kitchen ventilation system.

3. Heating element; The remaining smoke, heat and grease that passes through the baffle filter and through the dining room ventilation hood will enter the system's ductwork. Once in the plumbing system, it will flow to the kitchen exhaust fan and eventually leave the building. A restaurant hood/ventilation system may consist of a single hood and an exhaust fan, or may consist of multiple restaurant hoods and fans connected through multiple ducting systems. The type of system you need depends on the size of the kitchen, the number of heating elements, and their location.

4. Hinge cover and baffle filter; It is important that your restaurant exhaust fan is fitted with a hinged cover that can be opened from the top. In order to operate a safe and compliant system, it is important to be able to clean the kitchen ventilation fan and ductwork from top to bottom to remove any residual grease that may have accumulated in the ductwork. This will reduce the possibility of fire and keep the kitchen building safe. It is recommended to install a quality baffle filter to minimize grease residue, but even with the best baffle filter, some residue is inevitable and the system needs to be cleaned.

5. Fresh air device; Fresh air is another essential component of any restaurant kitchen ventilation system. In addition to heat, grease, and vapors associated with food, exhaust fans pull air out of restaurant kitchens that needs to be replaced. The fresh air unit brings fresh, clean air to circulate in the kitchen and "replenishes" the air drawn out by the fan.
